Creamy, fizzy, and sweet, these Vegan Kombucha Ice Cream Floats are a delicious but healthy summer treat, reminiscent of childhood.
Did you drink ice cream floats as a kid? I didn't drink them very often but I have a distinct memory of drinking a root beer float when I was 4 or 5 years old. I remember the sticky sweet, fizzy root beer mixed with a few heaping scoops of vanilla ice cream. The combination was delightful... for a 5 year old.
Now I couldn't imagine drinking something like that. Not only because the ingredients in root beer and ice cream are so unhealthy, but because my palate has changed drastically since then. Even a sip of a root beer float would be waaaayyyy too sweet for me now.
But just because I avoid added sugars and dairy products doesn't mean that I shouldn't be able to enjoy an ice cream float if I want to. I'd love to reminisce about childhood in a healthy way. And now I can (and you can too)!
These Vegan Kombucha Ice Cream Floats are the perfect healthy substitute to a root beer float. They're sweet, but not too sweet. Fizzy and summery. Made with whole food ingredients. And gut healthy.
Let's talk ingredients. (There aren't very many.)
If you've never tried kombucha before, you're in for a treat. Kombucha is a beverage made by fermenting tea with a culture of bacteria. It sounds a little intimidating, but I promise it isn't! You don't have to make your own -- just buy some from the store. Look for a brand with no added sugar.
Kombucha veterans might point out that all kombucha has some added sugar. And they're right. When you make kombucha, you need to add sugar to feed the bacteria. So yes, your kombucha will naturally have some sugar, but the bacteria will eat most of it.
When I suggest that you buy a brand with no added sugar I mean that you should look for one without sugar on the ingredients list. Many kombucha brands add extra sugar to make the drink sweeter. We don't need this! My favorite brand, GT's, uses fruit juice as a sweetener. Much better than sugar.
One last point about kombucha: if you've never had it before, you might notice it tastes slightly like vinegar. You might need to drink it once or twice before you really enjoy the taste. That's no reason to avoid making kombucha ice cream floats though! Adding ice cream to the kombucha will make it sweeter and more beginner-friendly.
As you may have guessed, we'll be using banana nice cream (my absolute favorite). It's super simple to whip some up. Just throw some frozen bananas in a food processor or blender with vanilla extract and you're golden.
Step 1. Make the ice cream. Blend your bananas and vanilla.
Step 2. Freeze the banana ice cream mixture for at least 15-20 minutes, or until you're ready to serve.
Step 3. To assemble the float, pour the kombucha into a glass. Leave room at the top for the nice cream! Then scoop some banana nice cream into the glass.
You can drink these Vegan Kombucha Ice Cream Floats with a straw or scoop it with a spoon. Either method is incredibly delicious, refreshing, and healthy. Enjoy!
Thank you God for childhood and all the memories you give us from that wonderful time in our lives. Let us continue to have childlike faith throughout adulthood. Amen
