I'm a big fan of recipes that taste great and are naturally nutrient dense. This recipe is exactly that.
Beans have protein and fiber to keep you full and satisfied. And they also provide a host of other nutrients. Add some other veggies to the mix and you've got yourself an incredibly healthy salad.
Plus, this vegan white bean salad tastes amazing!
The dressing is just a simple mixture of vinegar, maple syrup, salt & pepper. But that acid & sugar combo is so tasty. Throw on that minty flavor of fresh basil and you'll be craving a bowl of this salad.
Step 1. Prepare the dressing. In a small bowl mix the white wine vinegar, syrup, salt and pepper.
Step 2. Add the beans, celery, red onion, basil, and garlic to a large bowl.
Step 3. Add the dressing and toss to combine.
Step 4. If desired, transfer to the fridge and chill for an hour to let the flavors combine. Serve and enjoy!
