This Teriyaki Tofu Bowl is a simple meal of tofu and broccoli in a quick homemade teriyaki sauce. These Broccoli Tofu Bowls take only 25 minutes to make and are completely vegan, gluten-free, and oil-free!
I'm always looking for light, yet filling dinners. Especially during the summer, I don't want to eat a bunch of heavy meals. Plus, I want to make sure I give my stomach enough time to fully digest my food so I can sleep well. A dinner on the light side is just what I need. Enter: these Teriyaki Tofu Bowls.
It's basically exactly what it sounds like. Broccoli and tofu in a delicious teriyaki sauce. Served over rice. With some green onions and sesame seeds for topping.
This bowl is super simple to make, too. Don't be afraid of tofu if you've never cooked it before. It's not hard at all!
Step 1. Make the teriyaki sauce by whisking the liquid aminos, water, date syrup, arrowroot, garlic, pepper, and ginger.
Step 2. Cube the tofu.
Step 3. In a large skillet, heat 1/4 cup of the of teriyaki sauce over medium-high. Add the tofu and cook 5-7 minutes - stir occasionally, allow the tofu to brown a minute or two on each side.
Step 4. Add the broccoli and remaining 1/4 cup of teriyaki sauce. Turn the heat to medium, cover and cook 3-5 minutes until the broccoli is tender.
Step 5. Serve over a bed of rice with a garnish of sliced scallions and sesame seeds.
