This Vegan Apple Galette is a plant-based version of the classic French recipe, featuring a plant-based and gluten free pie crust and a super simple apple filling. An easy dessert to impress any guest!
If you want all the flavors of a pie without actually making a pie, a galette is calling your name!
There's less rolling, less mixing, less baking, and less waiting for the pie to set. A galette is quicker and easier than a pie. And it has all the same flavors!
Galette is a French term. It describe a flat, round, freeform cake or pie.
Many Galettes are made with a pie crust that is folded over a fruit filling. They are so easy to make and are quicker than pies!
This vegan apple galette is a plant-based version of the classic French recipe, featuring my wfpb and gluten free pie crust and a super simple apple filling.
Step 1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Step 2. Make the crust. In a large bowl whisk together the oat flour and salt. Add the nut butter and maple syrup and use a fork to incorporate. Add the water and mix until a dough forms.
Step 3. Place the dough in between two sheets of parchment paper roll into a 12" circle (the circle doesn't have to be perfect). Set aside.
Step 4. In a small bowl mix the maple syrup, cinnamon, nutmeg, and salt.
Step 5. Peel (if desired) and core the apples. Cut the apples in half then slice very thinly. Fan them out slightly.
Step 6. Place the crust on the prepared baking sheet. Arrange the apples in the center of the crust, leaving a 1-1.5" border. For best visual results try to arrange the apples "randomly" and fill in any empty spaces with smaller apple pieces.
Step 7. Brush the apples liberally with the maple syrup mixture.
Step 8. Fold in the sides of the crust. If any part of the crust breaks, just press it back together.
Step 9. In a small bowl, whisk together the soy milk and agave to create a vegan egg wash.
Step 10. Brush any exposed dough with egg wash and sprinkle with sugar.
Step 11. Bake for 30-40 minutes, until the crust is golden brown and the apples are soft.
Step 12. Let cool briefly, then serve immediately. Enjoy with ice cream!
The classic way to serve your galette is with a scoop of ice cream on top!
Thinner slices will allow the apples to get nice and soft in the oven. It also creates a prettier design!
To make the pie crust nut-free use tahini or sunflower seed butter instead of nut butter.
Tahini and sunflower seed butter have a stronger flavor than cashew or almond butter, so you may notice a more earthy flavor in the crust.
This galette will work with other fruits besides apples! A fruit that is sliceable, like peaches, is ideal. But feel free to make this galette with berries too - just toss the berries in the maple syrup mixture before adding them to the crust
Store this vegan apple galette covered in the fridge for up to a week.
I do not recommend freezing this galette.

*Depending on the exact consistency of your nut butter, you may need a few extra teaspoons of water. The dough should be workable and easy to roll out but not sticky.
